Quick-Mix Christmas Pudding

 

  • 1½ cups wholemeal flour
  • 1 tspn mixed spice
  • 1 tspn ground ginger
  • 1 cup stale wholemeal breadcrumbs
  • 1 cup chopped dates
  • ½ cup chopped raisins
  • ½ cup chopped dried apricots
  • 60g butter
  • 1/3 cup honey
  • 1 cup cold mashed pumpkin (cook about 350g)
  • 2 free range eggs, lightly beaten.

 

Sift flour and spices into large bowl, stir in breadcrumbs and fruit. Combine butter and honey in small saucepan, stir over low heat until butter is melted. Stir honey mixture into bowl with pumpkin and eggs.

 

Spoon mixture into well greased steamer (7 cup capacity), cover tightly. Place pudding in large boiler with enough boiling water to come halfway up side of steamer. Cover tightly, boil for 2 hours, adding more boiling water as it evaporates during cooking time. Serve with yoghurt sprinkled with nutmeg, if desired.
