Vegetarian Sausage Meat


  • 1 cup rice
  • ½ cup chopped parsley or celery
  • 1 medium onion (finely diced)
  • 1 peeled chopped tomato
  • 1 teaspoon marmite or vegemite
  • salt and pepper to taste


Boil together all the above ingredients. When mixture is cooked allow to cool.

Once cool add the following:

  • 1 tablespoon peanut butter
  • 1 egg
  • pinch of mixed herbs
  • 1 cup fine breadcrumbs

Mix all ingredients well and leave until mixture is cool enough to handle. Shape into small patties and roll in breadcrumbs. Leave in refrigerator till cold, a day at least if possible. Fry in shallow olive oil when needed. Keeps well in the refrigerator. Mixture can also be used for vegetarian sausage rolls.


Makes 20 patties
